Bright golden-green colour with a fruity aroma carrying notes of fresh-cut grass, green tomato leaf, and ripe olive fruit. The palate is full and grassy with the long peppery finish that signals high natural polyphenol content. Versatile enough for daily drinking, finishing dishes, salad dressings, dipping bread, and as a finishing pour over grilled fish, lamb, or roast vegetables.
"Działka Tomka" is a 300-year-old family grove in the Kritsa Valley above Mirabello Bay, eastern Crete. The valley sits between the Lasithi mountains and the Aegean — a microclimate of intense sun, cool nights, and well-drained limestone soils. Our trees are fed by rain and centuries of careful soil management; no chemical fertilisers and no pesticides.
Olives are hand-harvested at full maturity and transported to the local Kritsa cooperative within hours. There they are cold-extracted at temperatures below 27°C — well within the requirements for "cold extracted" extra virgin classification. Because the oil never sees high temperatures or chemical solvents, the natural polyphenols, vitamins, and aromatic compounds remain in the bottle. The mill is certified to ISO 9001 and HACCP (ISO 22000:2005).
Use ELIATO as a finishing oil for the strongest expression of its character — a generous pour over salads, grilled fish, roast vegetables, or fresh bread. It is equally suitable for everyday cooking, but its flavour is at its best uncooked or lightly warmed. Some buyers take a daily teaspoon for the Mediterranean-diet polyphenol benefit.
Store in a cool, dark cupboard away from heat and direct sunlight. The Verdetrusco UV-protective glass blocks the light that degrades olive oil, so the bottle does the heavy lifting — but a kitchen cupboard away from the stove is still ideal. Once opened, use within three to four months for best flavour.
