Early-Harvest vs Late-Harvest Olive Oil: A Buyer's Guide

Early-harvest olive oil is pressed from green, unripe olives picked at the start of the season. It carries far more polyphenols than oil from fully ripe fruit, usually two to three times as much, it tastes noticeably more bitter and peppery, and it costs more because green olives give up much less oil per kilo. Late-harvest oil from ripe olives is milder, cheaper and higher-yielding, but lower in the protective antioxidants that make olive oil worth paying attention to in the first place.
That is the short answer. If you are trying to decide which to buy, the rest of this guide explains the trade-off in plain terms, corrects a few things people get wrong, and tells you how to read a label so you actually get what you pay for.

The only way to know an exact number for a given oil is a laboratory phenolic analysis, and cultivar, region and storage all move the figure around. But the direction of the trade-off is well established.
Why green olives carry more polyphenols
As olives ripen on the tree they change colour, from green to purple to near black, and their chemistry shifts with them. Polyphenols tend to peak around veraison, the point where the skin first starts turning from green to purple, and then decline as the fruit fully ripens. Oil yield does the opposite: it climbs as the fruit softens and fills with oil.
So the grower faces a genuine choice. Pick early and you get a smaller volume of intensely flavoured, antioxidant-rich oil. Wait, and you get more oil per tree but a milder, less protective product. A 2011 study in Scientia Horticulturae by Dag and colleagues tracked exactly this, finding that oil yield rose while phenolic content generally fell as the maturity index increased. The relationship is not perfectly linear, and cultivar matters a great deal, but the broad pattern holds across the research.
The bitterness and the pepper are the point
Here is the misconception that costs people the most. Many first-time buyers taste a strong early-harvest oil, feel it sting the back of the throat, and assume something is wrong with it. The opposite is true. In fresh extra virgin olive oil, bitterness and that peppery cough are positive signs. They come from the phenolic compounds themselves: oleuropein and oleacein behind the bitterness, and oleocanthal behind the peppery sting.
Oleocanthal is worth knowing by name. A 2005 paper in Nature by Beauchamp and colleagues showed it inhibits the COX-1 and COX-2 enzymes in a way pharmacologically similar to ibuprofen. The Olive Wellness Institute summarises the practical scale: around 50 g of a strongly pungent extra virgin oil supplies roughly 10 mg of oleocanthal, comparable to about 10 percent of a standard ibuprofen dose for pain relief. That is a dietary effect, not a medicine, and nobody should treat olive oil as a drug. But it does explain why the pungency and the health interest travel together.
Rancid oil, by contrast, does not taste peppery at all. It tastes flat, waxy, or like crayons and old putty. If your oil tastes dull rather than alive, age and poor storage are the likely culprits, not the harvest.
Why early harvest costs more
The price gap is mostly about yield. Green, unripe olives are simply less oil-rich. Figures vary by grove and season, but it can take roughly twice as many olives to fill a bottle early in the season, on the order of 11 kg of fruit per litre against around 4 kg later on. Stack on a short picking window, hand-harvesting to avoid bruising the firm green fruit, and fast cold processing to protect the phenols, and the higher shelf price stops looking like a markup and starts looking like arithmetic.
There is a quality dividend hidden in that firmness too. Early, undamaged fruit pressed promptly tends to produce oil with very low free acidity. The legal limit for extra virgin, set by the International Olive Council and EU, is 0.8 percent free acidity (as oleic acid), with no sensory defects and mechanical extraction only. Good early-harvest oils sit well below that ceiling. Our early-harvest Koroneiki comes in below 0.3 percent, which is the kind of number you get from sound fruit handled quickly rather than from anything you can fix later.
What about the health claim?
European law lets olive oil carry one specific, regulated claim. Under Commission Regulation (EU) No 432/2012, oils may state that "olive oil polyphenols contribute to the protection of blood lipids from oxidative stress." The claim is only allowed for oil containing at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil, and the label must tell the buyer the benefit comes from a daily intake of 20 g, about a tablespoon and a half.
That threshold is useful as a mental benchmark. It is not a weight-loss or disease-cure claim, and it does not prove any single brand is medicinal. It simply marks a real, measurable level of protective phenols, the kind of level early-harvest oils are far more likely to reach.
How to read the label
Harvest timing is only half the battle. Polyphenols degrade with light, heat, oxygen and time, so a high-phenol oil bottled in clear glass and left on a sunny shelf for two years has thrown away its advantage. When you shop, look for:
- A harvest date on the label, not just a best-before. Recent is better.
- A free acidity figure if it is published. Under 0.3 percent is excellent.
- Dark, UV-protected glass. Ours uses Vetreria Etrusca's Verdetrusco bottle for this reason.
- A named cultivar and single estate. Koroneiki, the Greek variety we grow, is prized for high-polyphenol, low-acidity early-harvest oil.
One thing not to trust is colour. Greener oil looks healthier, but the green comes mainly from chlorophyll and tells you little about quality or polyphenols. Professional tasters use blue glasses precisely to hide colour and judge the oil on aroma and taste alone.
Which should you buy?
If you mostly fry, roast and sauté in volume, a milder late-harvest oil is the sensible everyday choice. High heat degrades the delicate aromatics anyway, so an expensive early-harvest oil is partly wasted in a hot pan.
If you want the antioxidants, the peppery freshness and the finishing-oil character, buy early harvest and use it raw: over salads, soups, grilled vegetables, fish, or simply good bread.
